When you read this, I’ll be in Paris with my sister! We decided to take a girls trip earlier this year, and I found *the most amazing deal* on flights. We’re only in Paris for a couple days, but I’m sure it’s going to be so worth it. I can’t wait to tell you all about it when I get back, or you can follow along on Instagram to see what we’re up to!
Anyway, I have a recipe to go along with last week’s low sugar granola. Sure, it’s not super exciting, but this healthy fruit and yogurt parfait is a great way to make plain Greek yogurt actually enjoyable. Plus it’s really easy to assemble once you’ve made the granola.
Plain Greek yogurt is almost inedible on it’s own, but the fresh fruit (or dried, I’m not picky) helps add some sweetness. There isn’t a lot of sugar in the granola, but it provides necessary texture and crunch. My secret ingredient though is…vanilla extract. I stir some into the Greek yogurt to give it a little more flavor. I think vanilla extract adds the impression of sweetness without actually adding sugar.
This healthy fruit and yogurt parfait still isn’t very sweet, so feel free to add a drizzle of honey or maple syrup. I think a sprinkle of cinnamon would also be fantastic, especially with raisins or apples. I have a huge batch of granola, so I’m sure I’ll be experimenting with flavor combinations!
I’m really excited that I’ve found a way to enjoy Greek yogurt for breakfast. The protein helps me stay full longer. Plus I think eating a healthy breakfast can help me make healthier choices throughout the day…which means more room for eclairs on my trip!!
- ½ cup plain Greek yogurt (see notes)
- ½ teaspoon vanilla extract
- fresh or dried fruit
- ¼ cup Low Sugar Granola (see link in the post above)
- Combine the Greek yogurt and vanilla extract. Add the fruit.
- If serving immediately, top with granola. If making ahead, store the granola separately and top just before eating.
